[edit] Nutritious Popsicles

I have had good success in making popsicles with Carnation Instant Breakfast powder and milk. Sometimes we need to have that extra nutritional boost and drinking the Ensure or other drinks just doesn't seem appealing after a while. I wonder if Sutent mouth sores would be another instance where a cool popsicle would do the trick. Anyway, I get a large can of chocolate powdered Carnation Instant Breakfast. It comes in individual packets, but we have been using so much of it so this is the best size for us. I bought great popsicle molds from Amazon and they are called Tovolo Yellow Groovy Pop Molds, for $7.99 for a set of 6 with a tray that you set them into. I mix the Carnation Instant Breakfast with milk and freeze the popsicles. My daughter can eat them and keep them down really well. I think it is better than chugging the mixed drink because that comes back up sometimes. So, it goes down nice and slow and she is getting good nutrition in addition to the other small meals she is eating. Just wanted to share!


[edit] Tofu Pudding

Tofu pudding is good and makes a "mousse" like treat. Easy! Two packages "silky" tofu chilled (it's boxed and lasts 6 months), 1 lg one package chocolate Jello pudding (sugar free or regular), & a bit of milk. Whirl it all together in a food processor until smooth. Chill, serve. It's outstanding, rich, no "tofu" feel at all.
